The history of this taverna alone is reason enough to drive to Kinidaros, a remote mountain village on the island. It begins in 1931, when Vasilis Klouvatos opened a café and general store, where, in keeping with the customs of the time, his barber’s shop and butcher’s shop were also housed. At some point, the reins passed to his son, Giorgos, nicknamed “Vasilarakio”, who gradually transformed it into a butcher’s taverna. Today, it is run by Vasilis, the grandson, known as Laris, said to derive from makelaris, butcher, in a play on the Italian word macellaio. He has elevated its culinary profile through collaborations with local shepherds, from whom he sources native meats, goats, lambs and calves, which he butchers himself, ages in dedicated dry-ageing fridges and grills masterfully according to the cut.
